Recipe - Ange's Steak Strogonoff
Makes approximately 6 servings Approximately 290 calories per portion
Ingredients
3 Sirloin Steaks - Fat Trimmed & Diced (You can used normal diced beef but it will be slightly tougher)
2 Tablespoons Olive Oil
2 Medium Red Onions - Sliced
200g Chestnut Mushrooms - Sliced
1 Tablespoon Plain Flour
300ml Beef Stock
1/2 Teaspoon Paprika (more or less to taste)
150ml Reduced Fat Creme Fraiche
Method
Heat a large griddle or frying pan over a high heat and brown the steak (do not cook through), once browned, pop the steak onto a plate to the side, to be re-added later.
Add half of the oil to the pan and reduce the heat to medium, add the onions and stir frequently until softenened, add the remaining oil and the mushrooms and stir the mixture over the heat until the mushrooms are cooked through, add the plain flour and paprika and stir until mixture is coated.
Heat a saucepan over a medium heat and transfer the contents of the griddle/frying pan into it, adding the beef stock, bring the pot to the boil, add the creme fraiche and the resting steak/juices and simmer for 15 minutes, stirring occasionally.
I like to serve this with some rice or some roast potatoes and steamed vegetables. Great for prepping ahead and freezing.
