Recipe: Ange's Saag Paneer

Makes approximately 4 servings Approximately 235 calories per portion

Ingredients

  • 300g Tofu or Paneer Cheese - Cut into 1 inch cubes.

  • 3 Tablespoons Olive Oil

  • 1 Medium Red Onion - Sliced

  • 50g Baby Spinach

  • 2 Garlic Cloves

  • 1 Teaspoon Turmeric

  • 200ml Vegetable Stock

  • 1 Teaspoon Lemon Juice

  • 1/2 Teaspoon Cumin

  • 1/2 Teaspoon Garam Masala

  • 1 Teaspoon Granulated Stevia

  • 1 Teaspoon Chilli Powder

  • 150ml Coconut Milk

Method

Blitz the onion, spinach and garlic in a food processor until finely chopped and the spinach is almost blended.

Heat the oil in a frying pan, reduce to medium heat add the tofu and turn occasionally for around 5 mins, sprinkle the turmeric into the pan and continue to fry until lightly browned.

Add the remaining ingredients (except the coconut milk) to a pan over a medium heat, also add the mixture from the food processor and the tofu. Bring to the boil.

Simmer for 15 minutes

Stir in the coconut milk and simmer for a further 5 minutes.

I like this served with rice.
