Recipe: Chris's Marinated Portabello Mushroom Burgers

I credit these to my buddy Chris (thefatvegan.ie) who brought them along for a weekend camping trip in West Cork. I have made my own take on them. You can see his own version here

Makes approximate 3 "Burgers" Approximately 165 calories per mushroom (not including bread bun)

Ingredients

  • 1 pack of Portabello Mushroom (Large Flat Caps will do if not available), washed and exterior of cap pierced with fork in several places

  • 40-50ml of Virgin Olive Oil

  • 2-3 Garlic Cloves - smashed with side of knife

  • 1-2 Tablespoons of Chilli Flakes

  • Black Pepper to taste

Method

To Prepare:

Pop your mushrooms into a ziplock food bag

Pour in the olive oil, chilli, garlic and black pepper.

Shake the bag well to ensure the mushrooms are completely covered in the mixture and leave to marinate in the fridge overnight.

To Cook:

Heat a large saucepan or frying pan which has a lid over a high heat

Place the mushrooms into the pan and drop to a med-high heat, when the mushrooms release their own water, reduce the heat and pop the lid on for a few minutes.

Best served in your favourite bread bun with a little spinach and your relish of choice. I also like to make some homemade oven roasted chips.
