Recipe: Ange's Sticky Beef Stir fry (Meal Prep)
Makes approximately 2-3 portions, approximately 345 calories (excluding stirfry veg & rice/noodles)
Ingredients for Prep
1 pack of diced beef (400g)
3 Tablespoons Honey
Juice of 1 fresh lime
Chinese Five Spice to taste
Dark Soy Sauce to taste
250ml Beef Stock made up
Ingredients for Serving
Frozen or fresh stir fry vegetables
1/2 teaspoon sesame seeds.
Rice or Noodles
50g peanut & cashews (optional)
Method for prep
Stir 2 tbsp honey, lime juice, spice and soy sauce together and put into a lidded plastic container with the beef, coat the beef in the marinade and leave overnight (or at least a couple of hours) to infuse the spices.
Once marinated, put slow cooker on low setting and add the beef stock, add the 3rd tablespoon of honey and stir until well combined.
Add the beef and cook on low for 5-6 hours.
Once cooked this can be cooled, portioned out and refrigerated or frozen for use at another time.
Method for serve
If frozen, defrost fully. Follow rice/noodles package instructions.
For the stir fry add a little oil or frylight to a large frying pan or wok, over a high heat add the stirfry vegetables. until they start to cook through and soften/brown, then add a portion of the beef to the pan, bring the contents of the pan to the boil and turn down the heat a fraction so it's hot enough to evaporate the majority of the water of the stock off, but not high enough to burn and add the nuts if you want to add them. Once you have a light sauce consistency, you can serve with the rice/noodles and sprinkle the sesame seeds over. You can also have it without the rice and noodles and bulk out with more veg or beansprouts.
