Recipe - Ange's Slow Cooker Marmite Chunky Chilli (Meal Prep)
Makes approximately 6 portions, approximately 250 calories per portion
Ingredients
1 courgette
1 Bell Pepper
1 Red Onion
1 Clove of Garlic
1 pack of braising beef (600g) - avoid lean cuts as they will toughen up and be less flavourful.
1 Pint Beef Stock made up
15g Marmite (optional if you're a hater)
1 Fresh Red Chilli
1/2 Teaspoon Cumin
1/2 Teaspoon Chilli Powder
Salt & Pepper to taste
1 Tin Butter Beans (or whatever beans you like)
1 Tin Chopped Tomatoes
40g Ground Almonds
Method
Roughly chop the onion, pepper, chilli, garlic and courgette.
Make up the beef stock, adding the Marmite until disolved into the water, put the stock in the slowcooker.
Add the beef and the chopped veg and chopped tomatoes to the stock.
Mix the spices/seasoning with the ground almond and add to the pot.
Finally add the drained butter beans to the pot.
Cook for 7-8 hours on Low Setting (better) or if needed quicker 3-4 hours on High.
Great served with rice or tortilla chips and a little creme fraiche.
The chilli freezes well and is ideal for meal prep.
